In the regulation on foodstuffs yogurtis defined as “a dairy product of special consistency obtained by heating milk up to at least 90°C and cooling it to the degree of fermentation and subjecting it to lactic acid fermentation by adding yogurt yeast”.
Yogurt was not preferred in European countries except the Balkans before 1935-1940. It has achieved a big popularity with the understanding of its nutritional value for the last 40 years.
