HOMMAKHomogenizer Working Principle

Homogenizer ensures that the fluids passing through it are made homogeneous by reducing their particle size with cavitation, shear force, impact velocity and turbulence effect under pressure. In this way, phase separation is prevented.

To prevent phase separation physically, the particle size of the product should be reduced. Accordingly, surface tensions will decrease and phase separation will be minimized.

According to Stokes’ Law, the phase separation rate is proportional to the square of the particle diameter. For example, if the time required for a fat globule with a particle diameter of 2R to separate is T, it will be 4T for a globule with a particle diameter R to separate.

As a result, particle sizes should be reduced if phase separation is desired to be prevented physically. The most effective way to reduce particle size and prevent phase separation is the use of high-pressure homogenizers.
